bought a half kilo of machaca last night, dried cooked shredded beef. going to see how many days it keeps without refrigeration; almost 24 hours so far and no noticeable change in appearance or taste.
I'm making biscuits of it with 2/3 biscuit mix and 1/3 machaca, roughly. adding yogurt and water to make dough, and cooking as usual on my griddle with an inverted pyrex bowl to hold in the heat, flipping after a few minutes to cook both sides evenly and all the way through the middle. not bad tasting, but I should experiment with some spices. in any case they pack a lot of nutrition.
