marinated the remainder of the beef heart in soy sauce and cheap sherry after separating the parts with connective tissue and slicing the rest; braised some for tonight's dinner, cooked with rice, and am drying out the rest in the oven for jerky. the braised meat and rice came out tender and delicious; I have high hopes for the jerky.
